Description

Birria tacos are a popular Mexican dish made from beef or goat slow-cooked in a spiced broth. The tender meat is served in crispy corn tortillas with onions, cilantro, lime, and often accompanied by broth for dipping, offering a unique and flavorful experience.

  • 2 lbs beef chuck roast or goat meat (substitution: pork or lamb for a different flavor)
  • 3 dried guajillo peppers
  • 2 dried ancho peppers
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups beef broth (substitution: vegetable broth for a lighter option)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 46 corn tortillas
  • Salt and pepper to taste
  • Chopped cilantro and diced onion for garnish

Optional Ingredients:

  • Lime wedges for serving
  • Sliced radishes for a crunchy side
  • Avocado slices for creamy richness

Instructions

Step 1: Prepare the Marinade

In a medium saucepan, combine the dried guajillo and ancho peppers with water. Bring to a boil, then reduce heat and simmer for about 10 minutes until softened. Transfer to a blender, adding garlic, onion, cumin, oregano, and the beef broth. Blend until smooth—this vibrant sauce will serve as the flavorful marinade.

Step 2: Marinate the Meat

Place the meat in a large bowl or a resealable plastic bag. Pour the blender sauce over it and add apple cider vinegar, salt, and pepper. Ensure the meat is fully coated in the marinade. Cover and refrigerate for at least 2 hours, or for best results, overnight!

Step 3: Cook the Meat

Preheat your oven to 300°F (150°C). Place the marinated meat and any excess marinade in a Dutch oven or heavy pot with a lid. Cook for about 2.5 to 3 hours until the meat is tender and can be shredded effortlessly with a fork.

Step 4: Shred the Meat

Once the meat is cooked, remove it from the pot and let it cool for a few minutes. Use two forks to shred the meat, and don’t forget to save the cooking liquid; you’ll need it later!

Step 5: Prepare the Tacos

In a skillet over medium heat, take the corn tortillas and dip them briefly in the reserved cooking liquid for added flavor. Fill each tortilla with shredded meat, then top with chopped cilantro and diced onions. Fold the tortillas to make tacos.

Step 6: Serve

Serve the tacos immediately with lime wedges, sliced radishes, and avocado on the side for added flair. Enjoy the rich flavors complemented by the refreshing garnishes!
